Quick Vegetable Noodles for Hostel Rooms

Quick vegetable noodles are one of the easiest hostel dinners when the mess is closed or you just want something quick. You only need an electric kettle, a heat-safe bowl and a few vegetables.

Adding some onion, carrot or capsicum makes regular instant noodles more colourful and filling without adding much extra cost. This recipe takes around 10 minutes, costs approximately ₹30 per serving, and requires very little cleanup.

Ingredients
  

1 packet instant noodles (with tastemaker)
1 1/2 cups water
2 tbsp chopped carrot
2 tbsp chopped capsicum or cabbage
1 tbsp chopped spring onion or onion
1/4 tsp black pepper
1/2 tsp lemon juice
1/2 tsp oil or butter (optional)

Equipment

  • 1 Electric kettle
  • 1 large heat-safe bowl
  • 1 plate (to cover the bowl)
  • 1 fork
  • 1 Small knife

Method
 

Boil the water in the electric kettle.
    Break the noodles into a large heat-safe bowl and add the chopped vegetables.
      Carefully pour the boiling water over the noodles until they are just covered.
        Cover the bowl with a plate and wait 3 to 4 minutes, until the noodles are soft.
          Drain most of the water into a sink, leaving about 2 tablespoons in the bowl.
            Add the tastemaker, black pepper, oil and lemon juice, and mix well.
              Cover for 1 more minute so the vegetables soften, then eat hot.

                Notes

                Safety: Only use the electric kettle to boil water. Pour it into a heat-safe bowl and do not cook the noodles inside the kettle. Pour slowly and keep your hand away from the steam.

                FAQs

                Can I cook noodles directly in the kettle?

                Not recommended. Noodles and starch stick to the kettle and are hard to clean, and many kettles are meant only for boiling water.

                How do I make the vegetables softer?

                Chop them small and keep the bowl covered for the extra minute.

                Can I make it healthier?

                Add more vegetables, use half the tastemaker, and add a boiled egg or peanuts for protein.

                Use the kettle only to boil water, then pour it into a heat-safe bowl. Hot water and steam can burn, so pour slowly and keep your hand clear.
